Sinds 2000 is Tartufo met een\u00a0assortiment van meer dan 500 artikelen\u00a0\u00e9\u00e9n van de grootste delicatessenwinkel in Nederland.\u00a0In de winkel proef je de gastvrije en levendige sfeer van Itali\u00eb waar veel Nederlanders \u00e9n Italianen onder andere mooie wijnen, heerlijke Pandoro\u2019s en de smaakvolle Parmaham kunnen kopen.<\/p>\n<p>Fabio stelt voor aan de bar te zitten en biedt me een Espresso aan. Enthousiast vertelt hij over zijn jonge jaren tot aan zijn 18<sup>e<\/sup> jaar op Sicili\u00eb. De familie van zijn moeder woont in Nederland en daardoor leerde hij op jonge leeftijd\u00a0Nederland kennen\u00a0en besloot\u00a0hier te gaan studeren. In die tijd heeft hij zijn vrouw Angela ontmoet, met wie hij samen Il Tartufo runt. Toen hij op een punt in zijn leven kwam en een keuze diende te maken, of teruggaan naar Sicili\u00eb en meewerken in het familiebedrijf in levensmiddelen of zelf iets opstarten in Nederland, heeft hij voor dat laatste gekozen. En daar zijn vele Nederlanders erg blij mee.<\/p>\n<p>Naast Il Tartufo heeft Fabio in 2008 Qualitalia B.V. opgericht, een Italian Food Consultancy bedrijf dat een keurmerk geeft aan delicatessenwinkels in Nederland en waaraan hij tevens authentieke Italiaanse producten levert. Om er een aantal te noemen: Caffe Booon, La Vita \u00e8 bella, La Zia Maria, That\u2019s Amore en Il Limone. Daarnaast houdt hij zich met vele andere projecten bezig.<\/p>\n<p>Het interview wordt even onderbroken, Fabio wordt weggeroepen voor een cateropdracht. Tijdens dit kleine intermezzo smul ik van een overheerlijk Italiaans broodje. Bij terugkomst vertelt Fabio over zijn ervaringen tijdens zijn zoektocht naar truffels, zijn visie op citroenen, olijfolie en zeezout, zijn eigen gemaakte Limo &amp; Cello en de keukentechnieken die helaas verloren gaan. Hij juicht het gebruik van echte, ambachtelijke gemaakte Italiaanse producten toe.<\/p>\n<p>Zijn passie voor de Italiaanse keuken en kennis van de Italiaanse gastronomie hebben geleid tot zijn toelating tot de wereldwijde organisatie \u2018GVCI\u2019 (internationale vereniging van Italiaanse chef-koks); Fabio is als enige de vertegenwoordiger van Nederland. Volgend jaar start hij met lesgeven op een kokschool van de Universiteit van Wageningen. Wij zijn er uiteraard trots op dat hij zijn specifieke Italiaanse gastronomische kennis overbrengt op vele leerlingen in Nederland.<\/p>\n<p>&#8216;Proef het ware Itali\u00eb!
